african spinach

A vegetable with many names (including Texsel greens and Ethiopian kale), this green is native to the Middle East and East Africa and is technically a member of the mustard family. However, these tender leaves are rich and savory with a flavor more akin to spinach than their spicy family members. African spinach is high in antioxidants, fiber, and folic acid.
