CELERY

Part of the “holy trinity” of Creole and Cajun cuisine and one-third of the French mirepoix, celery is a staple in many soups and stews. Generally considered in a supporting role, the bright herbaceous flavor of celery lends itself to being the star of a dish as well. Celery is high in calcium, vitamin C, and fiber.
