PEPPERS

This sweet vegetable is a true summer treat. When young, most peppers are green, but change to red, yellow, or orange as they continue to mature. Sweet, crisp, and juicy peppers are a treat raw or cooked. Peppers contain fiber, folate, and iron.

STORAGE TIPS:
Store in the crisper drawer of the refrigerator. Peppers can also be sliced and frozen for winter use. 

CULINARY TIPS:

  • Slice and add to a veggie platter

  • Stuff with rice or quinoa

  • Add to a frittata or quiche
