cucumber ginger agua fresca

For the simple syrup

  • ½ cup water
  • ½ cup sugar

For the drink

  • 5 medium cucumbers, peeled and coarsely chopped
  • 4 cups cold water
  • 1 1/2 inch piece of fresh ginger, chopped
  • ½ cup fresh squeezed limed juice
  • Ice to serve

Make the syrup: combine sugar and water in a small saucepan. Bring to a boil then simmer for 3 minutes, stirring occasionally until all the sugar has dissolved. Remove from heat and let cool completely. Set aside 4 tablespoons, the rest can be refrigerated for up to two weeks. 

In a blender, combine cucumbers, water and ginger. Blend on high until pureed. Pour the mixture into a pitcher through a fine mesh strainer, removing the solids. Stir in the 4 tablespoons of simple syrup and fresh lime juice. Serve over ice.
