African Spinach pesto
- 4 cups packed fresh African spinach
- 1 tablespoon minced garlic
- 2 tablespoons pine nuts (or walnut), toasted
- 1 cup olive oil
- ½ cup freshly grated parmesan (omit if freezing)
In a food processor, combine African spinach, garlic, nuts, and 1 tsp salt. Pulse to blend. With the machine running, pour olive oil through the food tube in a steady stream. Process until smooth. Add salt to taste.
