Tuna & MIcro greens sandwich
- 4 slices whole wheat bread
- 1 can of tuna (packed in water, drained)
- 2 tablespoons mayonnaise
- ½ red onion, finely diced
- 1 tomato, finely diced
- 1 tablespoon finely chopped parsley
- 3 small handfuls micro-greens (Sunshoots are recommended)
Mix the tuna, mayonnaise, onion, tomato and parsley. Season to taste with salt and pepper. Divide the tuna over 2 bread slices.
Place bread lids on top.
